i was thinking of putting the tape on the old carpet then the new carpet would adhere, the doors can be shaved

as old carpets are normally old, worn and soiled in areas however noticeable the soiling might be, I would want rid personally of the old and lay fresh, surly the time to take up and replace with new would even be less than taking the door off the frame and shaving.

It would also help to remove the old one first because you can use it as a template to cut the new one.

I think double sided would only last so long the edges might start coming up and need re taping.

I thought you might be doing this because its a rented house and you dont like the carpet but you would shave the doors??

I suppose it is down to your own taste then, whether the old carpet is clean enough, if you don't mind re-sticking corners and if you can live with shaved draft y doors if the carpets were to be replaced in later years and be lower in profile.
Yes you can, if the carpet underneath is reasonably clean then use it as underlay- lots of people do:)
Bit like sticking on another layer of cut-off jeans without washing the old.
