I would say "Two sheets of paper were printed...
As Paul suggests, the answer is 'were'. The basic subject of the sentence is the word 'sheets' - a plural noun - and so, in order to fulfil the agreement requirement, it must take a plural verb-form. The same would apply to 'cups of tea' or 'bottles of milk' etc.
Unless you're a teenager from Peckham, in which case the above is entirely correct. Innit.
