Sudoku generation

I assume that sudoku puzzles are generated by a computer programmed to produce grids with the numbers 1-9 in the horizontal rows, the vertical columns and the 9-square boxes.

How are numbers then removed up to a point where the puzzle is still solveable by a human being using logic and deduction?
