My recipe is as follows:-

Put 1 bottle of red wine in a saucepan. Fill empty wine bottle with 3/4 of water and 1/4 of orange or cranberry juice, add to pan. Add 1oz brandy or cognac if available. Add juice of 1 lemon. Add 2 cinnamon sticks and boquet garni (of allspice, 4 cloves and grated nutmeg), one sliced orange and 1 sliced apple. Heat slowly until mixture is hot and then add 2 tsp of brown sugar (add more to taste). Stir until dissolved and allow to simmer gently for a further 10 minutes. Serve.

Use a big pan, not aluminium. One bottle of red wine, (cheap will do.) Quarter bottle of rum, two cinnamon sticks, 4 cloves, grated nutmeg, inch of peeled ginger, pint of apple juice, lots of muscavado sugar, slices of lemon and orange. Heat up 10 minutes. Don't boil. Add lemonade to taste, last. the more lemonade, the futher it goeos. to top up as the night progresses, just add more wine and lemonade.
