I'm not an expert but I think it's to do with familiarity of syntax. It's because we often recognise word shapes by, say, the beginning, middle and end, and because we expect letter types in a certain order, then our brains join up the gaps.

We do it with word order too, as we do in the poem 'Jabberwocky'. Couldn't tell you the exact word, though.

If you want a more scientific term I think different researchers probably name it a bit differently depending on the angle of their own particular research project. Google "word recognition" + research, for instance.
