Food for parents!

We're going away for a week and my parents are coming with us. It's a self catering place (in the UK) and the facilities are pretty good. My problem is that normally, on these types of holiday, I am quite happy to cook the evening meal - things like curry or chilli etc. But, my mum has Crohns disease - and anything spicy doesn't agree!
So - any suggestions for meals that won't keep me tied to the kitchen, that are suitable for a non-spicy diet and that can be accomplished in a holiday home will be greatly appreciated!!

Why not stock up on Homepride cans of sauce or the like, pop them in the oven for an hour with chicken and then you have a simple and easy dinner. How about mince and potatoes which will take no longer than your chilli and rice. Beef cassorole which you can put in the oven and forget about for an hour. Pasta and sauce with garlic bread. Have a great holiday. (when we went self-catering we didn't have a tin opener, bottle opener or a gratter so you might be better taking the with you just incase)
Pot roast chicken (or any kind of meat) always goes down well - put loads of veg (carrots, leeks, onions, parsnips etc) in the bottom of a large pot, put a whole chicken on top (season it on top with salt, pepper, herbs etc), surround with peeled potatoes (or new potatoes to save time and energy on peeling!), then pour in a couple of inches of veg or chicken stock (Just Bullion powered stock tastes the best and is additive free - so probably Crohns-friendly). Oven cook for around 1 1/4 hours (depending on size of chicken). It only takes a few minutes to prepare and can be popped in the oven and left till done. When done, the potatoes are soft underneath and crispy on top, the chicken is moist and steamed yet has crispy skin and the veg underneath are soft - and all comes with its own gravy. Put in the centre of the table for everyone to help themselves! Dead easy! Have a great holiday!
spaghetti bolognaise, lasagne, fish pie, roast, quiche, sausages and mash, jackets and salad, soups and rolls, pizza and salad.
Nice stir fries with diced chicken breast, sliced peppers, onions, bean sprouts, mange tout, mushrooms, peas, sweetcorn etc.

You could add a simple soy or teriyaki sauce if she's allowed it and sweeten it up with some honey.

Takes minutes to do and tastes gorgeous
Or you could make the curries, chillis etc but do a seperate portion for your mum but without the spices.....i have to do exactly the same at home with the kids and they love it !!!
If I had to do it, I would take my crock pot/slow cooker with me. Fill it up in the morning before you leave the house with chicken, beef or pork and serve it when you get back at night.
