As we are all such big fans of Pips and her column in the Waitrose mag, you've probably already seen the new edition.

I'm loving the Mexican style coleslaw, with chillies, lime and coriander. I just love coriander.

As for the margarita sorbet ... Wow!!

I might even try making them myself.

Jayne -have never seen a Waitrose never mind seen one of their magazines but the coleslaw does sound nice. Always thought of them as a southern shop. Don't know of any here 'oop north.

margarita sorbet is so easy to make - after all it's a frozen Margarita just liquied (your sort of speek) a bit.....
want a reschipé for one?

waitrose what do they sell then? never seen one in these parts.
There's a Waitrose in Harrogate which was oop north last year when I was there.
1/2 litre water
1/4 litre sugar
3/4 litre fresh lime juice
6 good tablespoons cointreau or triple sec
8-10 very generous tablespoons tequila
1 teaspoon grated lime peel....

Stir water and sugar in heavy medium saucepan over medium heat until sugar dissolves.

Then increase the heat and bring to boil. Pour into medium bowl.

Mix in lime juice, triple sec, tequila and lime peel. Refrigerate until cold, about 2 hours - if 4 don't be concerned - as long as it is cold.....

Transfer sorbet mixture to ice cream maker and process according to manufacturer's instructions.

Transfer sorbet to container; cover and freeze until firm, about 2 hours. You can use a deep freeze but break up ice with a fork about every hour until it all binds.

Can be prepared 2 days ahead. Keep frozen.

Service - Freeze 4 Margarita glasses for 1 hour. Scoop sorbet into frozen glasses, perhaps a twist of lime across it and serve immediately. If anyone likes a little salt, then take the glass wet it and dip into a saucer of salt......

Tescos have a special on Freeze and Squeeze, 2 for £4, no need to make your own (though I don't think they do margaritas at the moment)
