Can anyone tell me what the pop stars can actually hear through the earpieces when they perform live

It depends. Some bands have a complex arrangement which the singer might find hard to keep up with 'live', so they may have one or two key instruments, and a drum beat to keep them in time. Some singers have the entire band in their ears, it depends on circumstances.
The main thing is that they can balance the music and their voice so that they can have whatever level they like. When singing live it is often REALLY hard to hear yourself above the band. That can result in singing out of tune as you can't hear your own notes. Also if the backing track is too quiet you may also sing off key. That's what happened to Jemini (?) at the Eurovision Song Contest a couple of years ago. They couldn't hear the backing track do they were basically singing unaccompanied! No wonder they were out of tune with the backing track..
