I don`t remember it being about pancake day , but there will be variations on the words and I`m from North East
Pancakes Leisela, Pancakes Leisela, toss them up to the ceiling
Pancakes Leisela, Pancakes Leisela, catch them if you can
For today is Sunday and tomorrow's Monday, Tuesday gay is Pancake day let's dance our cares away.
I do too, but can't remember all of it. Here's what I remember:

Pancakes Lisela, Pancakes Lisela, Now's the time to fry them.
" " " " " " " to fry.
For today is Sunday, and tomorrow's Monday,
Tuesday gay is pancake day let's dance our cares away.
Hopsa Lisela hopsa Marion dance our cares away.

Hopsa Lisela, Hopsa Marion, now we've made our pancakes,
" " " " " " finished our work.
Don you silken dresses, braid you flaxen tresses,
Tuesday gay is pancake day let's dance our cares away.
Hopsa Lisela, hopsa Marion, dance our cares away

Not sure about spelling and I feel there's another verse in there somewhere. Hope ths helps jog the memory
Del
The previous answer is correct, but it's missing the second it verse. The second verse is...

Toss them Marion, toss them Marion toss them upto the ceiling
Toss them Marion, toss them Marion and catch them as they fall.
Don't you dare to drop them, on the table pop them
Tuesday gay is pancakes day lets dance our cares away.
