I've become obsessed with trying to figure out this piece of music. It plays in the above video from 1:17:30 until the end (with the strings etc). Shazam can't help me and I can't find a soundtrack list or anything!

I thinkthe original soundtrack for the program is by Welsh composer Dan Jones. You might find the following link a useful starting point.
