House deeds?

I am moving house shortly and the mortgage is in my name only. Is it possible to have both mine and my wife's name on the Deeds without her being on the mortgage?

Deeds are irrelevant. The land registry entry could in theory be changed but in reality the lender would probably object unless the mortgage was also joint and they may not agree to that if the wife does not pass their lending criteria.
It shouldn't be possible, though some lenders in the past may not have been over fussy.

They shouldn't really grant a mortgage on a property where one of the owners is not party to the mortgage. It's very dodgy ground legally.
