How did ford find out that the incorrect oil had been put in the engine?

I would think any additional wear on the engine parts due to the wrong oil viscosity to be minimal but if fords have completely voided your warranty (not just covering the engine), then as an absolute minimum, I would insist Evans Halshaw make good any claim that would have been covered by the warranty.

You cannot expect Evans Halshaw to pay for a new engine, since this would put you in a better position than you would have been, had they not put in the wrong oil.

hmmm....same question, how do they know, the warranty procedure is done by the dealer not FMC themselves ,and if the servicing was done by the dealer the onus is on them...and as Hymie says the damage would be an absolute minimum, if any..lots of cars are running around on the wrong spec oil, never known a wrecked engine yet.
i dont know what damage the slightly wrong grade/viscosity would do (minimal as others say) but its pretty common knowledge in the motor trade that all ford zetec engines run on 5/30 fully synthetic engine oil. really poor mistake for any garage to make, particularly a dealer
