Does any one know a source for any type of wire for use in hot locations eg under an electric cooker hob.

Any good electrical supplier,CEL,senate,probably Maplin and in some of the larger B&Q .It should be to BS6141 and is also used for connecting up immersion heaters,storage heaters etc.
not sure what your asking there really its a case of the sleeve resisting the heat, in extreme cases I've seen ceramic beads used as cladding how close to that 1-2 KW element are you putting the wire how hot does it get ?
If its the internal wiring then RS list silicone rubber and glassfibre silicone rubber versions,but probably only in 25m reels,you could also try Farnell
