When buying a second hand car off somebody can you literally just give them the money and drive off? Or does it have to be registered in your name or something first?

It will definately have to be insured in your name first!

If you pay cash it's a good idea to also get a receipt to stop them from turning around later and claim you never paid.

if you do that without doing a hpi check then you must be mad,talk to someone who knows how to buy and sell a car.
