A 'grip' is a carpenter on a film set. Cameras used for rolling shots are put on a special stand, and tghen run on a set of railway tracks, which means a heavy camera can follow an action sequence smoothly. The stand the camera sits on is called a 'dolly' and the carpenter responsible for laying the tracks for it to roll on is a 'dolly grip',
