SLOW ROASTING lamb and ham

Hi To save too much time and fuss on Xmas day I'd like to SLOW ROAST the pork and lamb. Putting them in either the night before Xmas or in the morning around 9 ish. The lamb is around 800grams The pork around 1.5kg What temp and for how long should I do em ? (slow as possible please) ... PS I have a double oven but would like to put them both in the same oven so I have the top oven free for roasted tatoes etc.
