Write to them setting out the facts - dates, amounts, etc., as much info. as possible. Politely advise them how much you are owed, and offering them seven days from the date of receipt, to make payment, or you will pursue the debt through legal action. Send your letter Recorded Delivery, keep a copy, and your receipt.

If you get no joy, ask a solicitor to fire a warning letter at them - should be done for a nominal fee. If that fails, contact the Small Claims Court and see if you can take action that way.
Andy's advice is spot on if you want to handle it yourself.

Or you could go to the Citizens Advice Bureau (your local address book will tell you where) and get their advice for free. Youll tell them more than you mention here and they might direct you to an employment tribunal claim if your complaint is with the appropriate time period. Check if your circumstances are covered here:

If you left on good terms and worked the correct time of notice stated on your contract and adhered to it then you should be able to get your money. However if you just walked out without working your notice then they can keep the the money due to a breach in contract.

A relative of mine had this problem and we wrote to a business organisation which the company was a member of. They were very helpful and contacted the company on our behalf. Not sure what exactly was said but I think the general idea was that they would very publically lose their membership if they didn't pay up!
Another way - if its a retailer - is to choose a very busy Saturday - or another day when they have a shop full of customers, and loudly announce that you are there to collect the money they owe you. Don't be aggresive or they may call the police - be firm and polite and most importantly LOUD!!!!!! Good Luck!
