If I booked a week off work (holiday) then called work on the morning of the first day and said i was ill, would it be straightforward/likely for me to 'use up' my holiday by being ill (true or not) and then still have that week to use for holiday at a later date?!

I think the sickness means that your holiday is effectively not taken, and can be used at a later date. I would say though that you would be obliged to produce a sick note from your doctor to back up your claim. I'm not sure that self certification would be enough in a case like this. I'm sure other posters will have the full SP.
The answer is basically no: if you fall ill during your holiday most major employers (certainly in the public sector) would see that as your tough luck.
That's not actually true!
If you work for the Health Service and ring in sick whilst on leave, then your considered sick and your leave would be kept for another time
If you are sick whilst on holiday, it is highly likely you would need to prove it (i.e. with a doctor's line) in order to claim the holidays back. I think foulecamp's answer is wrong - I work for a local authority and the answer I've given is how it works for us. If we provide a line, we get our holidays back.

oligopoly, if you ring in sick whilst on holiday be it the 1st or last day you become sick until further notice.

Therefore as gammaray pointed out your leave is not used/taken.

You can self-cert yourself upto 7 days, but if on holiday abroad your employer may ask for proof of sickness, tho its best to check the work sickness policy or conditions of service manual

It depends where you work - certainly at the Company I work for if you fall ill during your holiday it is tough. You can't claim your holiday back and use it at a later date.

If your sickness occurs before the first day of your holiday and you are still ill when your hols start, then you can claim the holiday back.

Its my understanding from several H.R. pals I have, that sickness overrides holidays. Therefore if you fall sick during your hol, providing you have proof by way of a docs note. then your hols can be taken at a later date. Some firms do not insist on proof either, and will allow you to self-cert.

Depends where you work. From the CAB:

You are off sick whilst you are away on holiday

If you become ill while you are on holiday leave you may be able to get time off at a later date to make up for losing your holiday, if your contract of employment allows for this. If this applies to you, you should get SSP while you are sick.

If you become ill while on holiday and your employment contract does not allow you to take time off at a later date, you should get a mixture of SSP and holiday pay to make up your wages to your normal amount of pay.
