None but hygiene, catering , employment law and basic knowledge of running a business is desirable obviously. There are courses available to cover all of these.

Food Hygiene is essential.

Your local council Environment dept would be able to give you some free and useful advice.

You would also need a basic first aid certificate and it would be wise to get some basic health & safety training.
