How much notice to give?

My girlfriend has been in her job for 5 weeks. She hasn't signed a contract and is working on a self-employed basis.

This week someone else has offered her her dream job, so as you may guess, she is taking it. The question being, how much notice would she be expected to work out in her current job, given that she's only been there 5 weeks?

I don't think she has to work any notice as she hasn't signed a contract stating terms and conditions of employment.  She could give a week's notice if she felt like it.

What's the job?

If she's self-employed then surely she has no legal need to give notice at all, but out of sheer politeness could give at least a few days of her intentions.
Depends if she might ever need a reference.  She also needs to consider what the remedy would be for the company she is currently working for.  They could sue her for breach of the contract she says she hasn't got!  Seriously though, it's the reference that is all important.
if she is self employed then she works for her self e.g. she doesn't need to give notice to anyone else
