You light the wick and the heat vapourises the wax or fat (tallow etc) beneath it. This vapour then keeps the wick burning by acting as a fuel.

The secret of a good candle is to make sure that the wick is the correct thickness for the size candle. When you buy cheap candles often the wick size is wrong which is why they either burn with a too large flame, smoke alot or keep going out. Some of the best quality candles are manufactured by a company called Prices who supply the royal family.
