how do you use french kilner jars - ones with metal clips

i have the metal clip kilner jars and wondered how i can / preserve fruits/vegatables with them?

My mum used to use them and she was always buying new seals and lids, but it is worth it. Find a good recipe first though, and a pressure cooker is a real asset!!!
