Water freezes at 0 degrees Centigrade, and in a car radiator, the resulting expansion will cause cracking of the radiator and / or hoses. Adding anti-freeze, consisting of a chemical formula with a lower freezing point - typically -15 degrees Centigrade, reduces the likelihood of freezing except in seriously adverse conditions.
Antifreeze (ethylene glycol) has a much lower freezing point than water (about -40 degrees C, depending on the concentration).

Just like putting vodka in the freezer "� la Russe".
