Why is it not possible to watch one satellite/digital channel and record another?

You can do this with the ordinary channels because you actually have two tuners - one in the tv and one in the video. The problem with satellite and digital is that you only have one tuner - the box. The signal from this is then sent to both the tv and the video at the same time. In order to record a different channel from the one you are watching you would need two boxes - one connected to the tv and one to the video.
Or you could get sky+. I highly recommend it. it's pricy though but worth every penny.
