I have just had a new clutch and gearbox fitted to my astra, the clutch biting point is very low now, is this normal? does the biting point change as the clutch wears, or is the biting point adjustable?

The biting point does change as the clutch physically wears. So its normal for the biting point to be low after a clutch replacement. A high biting point is often a sign of a worn clutch plate. As far as I know you can't adjust this. When I had my driving test the instuctor had a new clutch fitted the day before my test, I kept stalling and he offered to adjust it for me, I knew there was nothing he could possibly do (especailly as he had no tools) but I let him do it. I passed my test.
when i first got my current car, the biting point was v high. This caused me problems when starting off. I got this adjusted quite easily to make it more equal to my previous car. I assume this was an easy job as it was done by a member of my family rather than a garage but it made a huge and obvious difference
it is amazing what we will accept as normal in cars, if you needed new gearbox + clutch, you were probably driving something that would have felt like a 1920's car to the rest of us. it is easy enough to adjust, haynes manuals (bless them) will show you how, but it will only feel like it did before the work was done if you get it back into that state, which will, hopefully, take a while.
