I've received a bouquet - one of those ones wrapped in cellophane with the water inside.

The flowers look so pretty the way they're wrapped, but should I take them out of the wrapping and put them in a vase, or are they OK to leave in the cellophane? I've never had a bouquet like this before!

They are quite happy to stay 'wrapped up'. You just need to keep an eye on the water level and top it up as usual if necessary. Just pour into the middle through the stems.
keep them in the wrapper for now - but when the water looks murkey - take them out and rearrange them in a vase of fresh water - cutting off dead - droopey leafs / flowers and trim stalks to fit vase.
as a florist i would recommend the following

never leave in the cellophane for more than 2 days

do not top up but remove from cello, re cut base of stems at a sharp angle and submerge in cool water.

at this time of year change water every two days and never stand in the window

you should get a good week to ten days out of your flowers
