Varnishing A Table

I have a wooden table which has been sanded down to the bare wood. I want to varnish it, matt, with a surface that can withstand very hot dishes. Any suggestions, please ?

What ever varnish you use and however many coats you apply, after all this work to restore it to its beautiful finish, I'd still use a trivet or two!

Thank you both.
When using the varnish, apply it in single brush strokes (not back and forward) along the grain and all travelling in one direction. The finish is better,
