Aubergine recipe

Eureeka! Picked my first ripe outdoor aubergine today, grown in a pot on my patio. (And the plant is still laden with more fruit) Now I need an interesting recipe for a celebration meal.

Hi wendyS - suggest a trawl through here but what about rinse, salt, drain, cube and skewer with peppers, cherry toms and mushroom to grill / griddle or bbq the little darling.

Serve with a spicy dip or a peanut dip and salad stuff.

As with most things, the simplest is the best. Just slice fairly thinly, smear with olive oil and a sprinkling of herbs and grill for a few moments on either side. It's the only real way to eat them!
When anyone mentions aubergines, Oscar Wilde's recipe for courgettes springs to mind.
Cut into quarter-inch thick slices. Sprinkle them with salt, cover with a dish-towel, and leave them for about 45 minutes.
Then throw them away!

heathfield - you really amused me with that one. But couldn't possibly do that after all the attention I'd nurtured on it. Actually we ended up doing mixed roasted vegetables in a brown rice salad with some griddled marinated chicken breasts. Eaten al fresco of course.
Actually, I quite like them as part of an antipasto. Thinly sliced, dry-fried, then a touch of oil and vinegar - somewhat similar to Aristotle's recipe, but a slightly sharper taste.
