I have purchased a tin of ratatouille which I thought looked very healthy as I am on a diet, but what do you service with it?

im not sure what the proper thing to serve it with is, but its nice as an accompniament (cant spell!) to fish(cooked in a simple or spanishy way) and maybe new potatoes.


Or even nicer is putting it on a jacket potato and melting grated cheese over it YUM

Normally eat it hot as a sauce over pasta. But honestly I can't imagine anything more dreadful than tinned ratatouille when the fresh version is so easy to make.


Just chop an onion, garlic clove, some tomatoes, some red pepper & possibly a courgette and cook for about 15 minutes. Used tinned tomatoes if the fresh ones don't have much flavour this time of year and I'm sure you'll find it heaps better than the tinned version.

my mum has it as a side with steak.


i prefer it on pasta, but you can also add it to lasagne, casseroles, chilli etc

It goes really well with cauliflower cheese.

I have it as a main course with some crusty french bread and fruity red wine.


It is very simple to make, it can be made in advance and warmed up - it tastes even better as the flavours marinade.



  • For a large portion for two

  • Large 'spanish' mild onion - chopped

  • Three medium sized courgettes, cut in bite sized pieces

  • Large firm aubergine

  • Pepper (yellow of orange for variety of colour)

  • tin chopped tomatoes

  • garlic crushed & chopped


Slice aubergine & salt, leave for hour to extract moisture then rinse, squeeze to get moisture out and cut slices in hlaf or quarters.


In large pan, fry chopped onions till soft - remove and put in large bowl


Fry pepper till soft - - remove and add to bowl


Fry courgettes till coloured - remove and add to bowl


Fry aubergine till coloured, add the chopped garlic, lower heat, add other cooked ingredients and tin chopped tomatoes, cook on low heat and let flavours meld. Add ground ppper, mixed herbs salt to taste.

i am on a diet too and i love ratatouille with cous cous or over pasta
Best over a large portion of Chips. Not good for the diet, but it is the best way to eat it.
