Where can I find information on the symbolism for the statues of knights on tombs - eg why are some in prayer, why are some holding swords whilst others have the sword by their side etc.

Similarly, what's the convention for equestrian statues and the position of the horse's feet.

if I remember rightly statues of knights with feet crossed died in battle you could find information pehaps by search on cathedrals like canterbury where black prince is buried
crossed legs means that they have been on a crusade

Crossed legs denote a Knight Templar..
