roughly chop an onion, couple of cloves garlic, 2 peppers, 2 courgettes, cut about 15 cherry tomatoes in half. Fry onion and garlic in olive oil, add a teaspoon of paprika and 4 bay leaves, then chuck in the rest of the veg, fry for 5 mins. Alternatively you can put all these ingredients in a roasting tray and put in a hot oven for 30 mins to roast. When cooked it's up to you whether you want to blitz in the blender for smoother sauce, or keep as it is for chunky veg pasta. Depending on your taste, you can grate cheese over (parmesan, cheddar, mozzarella, whatever) - I tend to make cheesy garlic bread on the side, and have a bit of a green salad too.
