Serves 4

Melon balls in rum is a beautiful, colourful, fun, fruit salad. The melon, pineapple juice and rum go together beautifully, to make a sweet, juicy, refreshing dessert, perfect for summer.

For a stunning dessert serve the melon balls and rum in a hollowed out melon shell, or for an elegant dinner party serve in martini glasses with a sugared rim. You can use any rum you like the taste of, however light rum is best. Appleton is a very delicious light rum that is reasonably priced and perfect for cocktails particularly ones with pineapple juice in them.

If you don’t like rum try vodka with apple juice. Make sure you pick good vodka; a desert should be delicious and enjoyable and so should a drink.  Zubrowka or Bison Grass vodka is one of the best vodkas, it is full of flavour and a perfect choice to go with melon, keep it in the freezer, vodka won’t freeze, and when you come to make vodka melon balls it will be perfect, very cold and thick.

If you are making this fruit salad for children just add more juice in and leave out the rum, it is still very tasty and looks fabulous.

Melon balls in rum is a low fat, healthy dessert full of vitamins and one of your five a day if not more. It is a perfect dessert if you are on a diet and can’t give up dessert, it is delicious and everyone can enjoy it.

If you don’t have a melon baller you can cut the melon into cubes, but it won’t be as pretty.
