Glazed Carrots

Glazed carrots are a tasty addition to any Sunday roast; they are tender, sweet and crisp, a perfect combination of flavour and texture. Glazed carrots are simple to make and won’t take much longer then just boiling them, but the difference in taste is phenomenal, even the fussiest of eaters enjoys them.

The carrots caramelize in butter and sugar which bring out all their natural sweetness as well as coating them in a light buttery glaze. This is a great recipe if you’re throwing a fancy dinner party and want a quick, simple, luxurious side dish; the carrots go with everything from salmon to a delicious sirloin steak. Glazed carrots also go down well with a special hearty family meal, maybe a stew or lasagne. The children will love the sweet flavours of the carrot, it is a perfect way of getting children to eat vegetables. 

Ingredients

  • 350g Carrots, small skinny ones
  • 40g butter
  • 1 tbsp sugar
  • Water

Method

  1. Peel the carrots.
  2. In a sauce pan melt the butter then add sugar.
  3. Add carrots to the sauce pan.
  4. Add just enough water to cover the carrots and simmer until the carrots are tender and the water has reduced to a syrupy glaze.
