i make it a lot, never looks like that but certainly tastes great. :)
i second that. Redcrx is the best cheesecake maker around. sis you have couple of weeks till you next visit :-)

Cheese cake

2 lbs Cream Cheese (the good kind, softened)
1 1/2 pints sour cream
1 Cup Sugar
4 tsp Vanilla extract
7 Eggs

Prepare pan: -

Mix graham cracker crumbs, 2 T sugar, cinnamon, and melted buttter.

Line 8" or 8 1/2" springform pan with crumb mixture on bottom and insides of pan.

Refrigerate until ready to fill.

Mix cream cheese on low, add a few eggs at at time and then add the rest of the ingredients. Mix for 15 minutes on medium.

Pour into a spring form pan (of course you already have your crust in there, either Graham Cracker, Chocolate Wafer, Vanilla Wafer.

Bake at gas mark 180 for 1 hour. Remove from oven a let sit for at least four hours or overnight in the fridge to set.

(My sister has a Pastry shop and this is her secret recipe :-) )
Make a biscuit base by crushing digestives and adding melted butter. Make a topping of 2x250gm tubs of Mascarpone, 40gms icing sugar and zest and juice of two limes. Simple and delicious.

Society.....are Graham Crackers american, never seen or heard of them here
Yelenots, the Chinese and some Asian stores carry it. Or just use digestives for crusts in place of Graham crackers. It's not exactly the same, but good enough.
yes indeed graham crackers are an american thing....i must prefer digestive biscuits for a cheese cake base....
