google it, the secret is in the handling, eg as little as possible, as pastry needs resting in the fridge, due to the warmth of yr hands spoiling the texture

Whizz dry ingredients in a food processor until like breasdcrums and then add a very small amount ofcold water gradually by hand and mix to bind together.
