I am a bad eater. I don't eat vegetables aside from Potatoes and the odd piece of Lettuce. I do eat meat, bread, cheese, tomato (pureed) and I do like Garlic. I much prefer crunchy foods in general (I know noodles are not exactly crunchy) as I said picky. I have never tried Noodles and I am trying to try new foods, I would like a simple recipe for fresh Egg Noodles. Maybe with chicken?

Anyone have a good one that I can adjust or one that is already tasty but not too fancy? I have looked online but they are a little too fancy for my tastes. Also, if you also are a picky eater - do you have some recipes I can try? I really want to expand the range of foods I eat.

A simple stirfry...for 4
400gm chicken breast fillet......cut into small pieces
400gm Chinese noodles.....medium or fine. There are many on the market...both dry and fresh
2 Tbsp Soy sauce
1Tsp corn flour
2-3 garlic cloves,crushed and minced finely
EITHER -lots of freshly ground Black pepper.OR a few shakes of Thai sweet chilli sauce
A small tin of either waterchestnuts (slice them) or bamboo shoots.....both are crunchy

Mix the chicken with the cornflour,black pepper or chilli sauce, and the soy sauce. Leave for 15 minutes

Heat a wok or frying pan...throw in the garlic-stir-then add the marinated chicken. Stir and toss until the chicken is no longer pink. Add the tinned veg...stir again til heated through.
Serve over the noodles.

You can also add a bit of finely chopped spring onion at the end..or some grated ginger with the garlic at the beginning.

this recipe works well with king prawns...raw or cooked as well. If you use the raw ones, cook them like the chicken, if you use cooked ones, then toss them in with the tinned veg just to heat thoroughly through.

My DH loves this
per person
one small fillet steak
one small onion or better 3 spring onions cut up into bite size bits (if its a spring onion,use the white and green bits but not the green leaves
quarter to a half of to a half of a sweet red pepper cut up into bites
about 4 medium mushrooms ditto
Sharwoods sweet chilli sauce.

slice the steak into strips about a mouthful each and fry in a little oil in a large HOT pan. If the pan is too small the veg will steam instead of frying. Fry according to taste, less time if you like it rarer. Take the steak out of the pan and set aside. keep the pan hot and toss in the mushrooms, get them going then add the onion, finally the red pepper. When the veg is cooked to your taste, turn the heat right down and put the steak back in. Pour over the chilli sauce, as much as you want (I use half a bottle for two people). Stir all together and serve over the noodles.
You can ssprinkle crispy noodles or crispy fried onion (salad dept in your supermarket) for crunch and use soy sauce if you want extra seasoning.
If you want to go to town, toss in a little chopped fresh or frozen ginger with the meat when you cook it and maybe a little frozen garlic added with the veg but mind it doesn't burn....so hungry now, i have stitches in my mouth so no chewing for a week :-((
