can anyone give me any good tried and tested recipes, or tips, for making a good deep victoria sandwich? mine always end up like two flat biscuits. and help would be gratefully received thanks LL

hi this recipe i use all the time

6oz selfrasing flour
6oz soft butter
6oz caster sugar
1/2 a ts of baking powder
3 large eggs /or 4 medium
cook on a 190 or 170 fan ass for around 20 mintues till middle of cake bounces back up good luck xxx

always you this method never fails,
.weigh 3 eggs, & what ever they weigh the same amount for each of the following.
s/r flour
caster sugar
soft marg or butter
then I beat all ingredients together with a electric handmixer. you can adjust amount of eggs accordingly.
bake for about 20 mins in fan oven170

thank you sas200 i'm going to try both and see how i get on LL
i use the same recipe as lotty but often replace an ounce of the flour with custard powder for a richer colour and a bit of flavour :-)
