You can do Spanish-type omelettes in the oven. I do the usual mixture (with cooked ham, bacon, onion or potato) and pour it into muffin tins or fairy cake paper cases to take to work for breakfast. Bake them at about 200C and just keep checking every few minutes until they are as well-cooked as you like. V handy if you are following a low-carb diet and want an easy to carry snack for during the day.
How weird - made one last night!!

I fried onions and mushrooms, wisked 4 eggs with some milk and black pepper. Splash of milk and some grated cheese and chopped ham. Bung it in a dish (pyrex or similar) and cook 20/25 mins on med heat in oven.

I am sure you could divide the mixture into smaller dishes and cook maybe 10 mins. Was yummy.

I have a problem with wheat and thought individual ones for breakfast would be ideal. ( A whole one cut up tends to break up) I have mini quiche dishes which i thought could be used if poss.

I do the same as SRH....have been for ages-I even freeze them.You can even put pre-cooked veggies-broccoli,carrots etc in the mixture.
