Does anyone have a recipe for plain fish cakes, that would be suitable for toddlers? I've never cooked fresh fish before as I don't eat it, but would like to start making fish cakes instead of using frozen ones. Thanks.

It`s just mashed potato and cod.Poach your cod in a little bit of milk, drain and add to mash. Its up to you how fishy you make them. Mix in a little egg yolk to bind them.Using some flour on your hands form into cake shapes. Put in the fridge to firm up a little. You can either buy bread crumbs or make your own. If you havent got a processor to make them rub some crusts up and down a grater.....You now need a dish with flour, one with beaten egg,one with the crumbs.Flour your cake, then egg, then crumbs.Fry till golden.
for a bit of colour use some salmon, or a different flavour, use a smoked (undyed) haddock or cod.

You can always hide some mashed veg in them as well, e.g. brocolli, peas etc
try using mashed sweet potato too, or a mixture of normal/sweet potato. It gives the fish cakes a good colour and sweeter flavour.
Mix together some cooked salmon or cod and some cooked small prawns. Add some mashed potato, chopped dill, spring onions and seasoning. Flour, egg and breadcrumb them, then pan fry and finish in the oven.
