Has anyone got the recipe for a variation on a mince pie.

You start off with the pie cases, then the mix is currents, sugar, eggs and other things I cannot remember which you melt and mix in a saucepan and then add to the cases, cook, and then top with icing.

Hi Pebbles. 175gm Short pastry or 1 pack frozen jus rol, Filling: 25 gm butter, 100gm currants, 100 gm demerara sugar, 1 egg, 2 drops vanilla essence, some chopped cherries. Make pastry and line an 18 bun tray. Melt butter add remaining ingredints and mix well. Put teaspoonful in each case and bake for about 15 - 20 mins at 200c. When cold decorate with glace icing and cherries. cheers skylight
