Hi Glittery, I'm using dried porcini mushrooms today in a risotto. You can get them in the dried food section ie; where the italian sauces are and purees...Tesco, and Sainsburys etc. Gourmet Merchant do them and they need soaking in warm water for about 1/2 hr before use....
A good tip is to keep the water that you soaked the porcini in and use it to top up your stock when making the risotto. It helps build up a lovely intese mushroom flavour. Mmmmm, any chance of an invite to dinner? :-)
Hi. In my Tesco they are alongside the dried rice, pulses etc. In a packet and quite expensive.
