Fry, grill or oven ?
I expect frying is the best way but what ever way, they always seem to make a lot of mess to clear up afterwards, so is there a way around this ?

I always go for a good quality banger, when I do buy them but I'm never really sure if I should prick them before, during cooking or not at all.

get one of those screens that goes over the frying pan and stops fat from spitting everywhere, I get them brown and then whack them in the Aga for 10 to 15.....
I prick them with a knife and then grill them (on foil that I can then throw away so I don`t have to clean the grill)
Noooo...never prick sausages.
I always grill, gently x x
I always do mine in the oven, along with the chips.
If you prick them, it lets the fat escape.
and the taste, SJ ;) x
A good banger shouldn't have much fat. I buy sausages from the local butcher ,never prick them and fry them slowly in a little oil and keep turning them until they're nice and brown.Grilled or oven cooked sausages always taste dry to me unless they're in a toad .
Now there's something I could munch back, a toad.....off the radar though with this min carbs diet.
I always buy outdoor reared pork sausages. They do not go dry in the oven. If I am eating sausage, I want the best quality I can get.
For you low carbs fans, this is one recipe that I have found....I substitute in pork, apple and leek from a local butcher down here

I have a deep tray with a wire rack, so I cover the bottom of the tray with Foil, replace the rack, put the Sausages on there and do them in the Oven. Turn them over halfway through. But NEVER prick a Sausage.
outdoor reared sausages,,,,,,,,,,,,,,,,, now that is clever !!!
Thank you Stephen + Shaneystar...NEVER prick a sausage!! ;) x x
Yes, anne. They are born in little nests in the fields. They have to be picked before sunrise to be at their best.
Oh dear, I like to skin them, try to make them square, then fry all 4 sides in a dry frying pan and get rid of the fat
I start off in a frying pan and transfer to the oven, I never prick them. Grilling is a crime against meat!

I detest sausages and always go for chipolatas.

All top notch answers!

I've gone for a gentle pan-fry, as I've an onion to use up.
The screen seems like a good idea, I'll be looking out for one.

Wild boar are about the best I've tasted so-far.
I fry gently on all sides, never prick...then transfer to the slow cooker for a bit. Add in shallots, and a wee bit of herbs/stock=easy shallot gravy.
never cook sausages in the oven. always fry very gently. Also you can boil sausages, they taste delicious. Always buy from a proper butchers . Never buy sausages from a supermarket, you never know how old they are and looks at the labels as they are full of chemicals.
