If you want a change from rice, potatoes or pasta don't forget couscous. I made the following tonight;

Simple, quick, and it was very well received. It would have been best to have had a tube of harissa and some Moroccan red wine, I had neither, so I improvised with hot pepper sauce and paprika, accompanied by a bottle of Rioja.

I tend to use the packs of flavoured couscous (Jamie Oliver, et al), bought when they're on special offer. I find them handy for throwing a quick snack together.

e.g. a small can of pilchards in tomato sauce, mashed up in a little hot olive oil for a few minutes, goes well with couscous. (It's quite nice on its own but add half a jar of 'Value' pasta sauce, some freshly ground black pepper and a few spices to turn it into a really cheap pseudo-Moroccan dish).
Get it from an Asian shop, far cheaper and the bags are (usually) ginormous, lasts forever, lol.
