because dessert is completely unrelated to food, it's just a fantastic creation that it is nigh-on sacrilegious to not eat.

The human urge to eat is stimltaed by scent first, and sight second. That's why you don;t enjoy food you cook as much as when someone puts it in front of you. If you are cooking, your urgeg to eat is aroused, but not satisfied straight away, so the edge goes off the urge by the time you sit down to eat. Anyone having the meal put in front of them has their irge to eat aroused, and satisfied at the same time, so full enjoyment ensues.

In either case, the initial stimulus receedes as the meal is eaten. Dessert brings a new stimulus, both smell and sight senses are 're-aroused' and the urge to eat returns, no matter how 'full' you thought you were.

for me it's because I get tempted by sweet foods.
I'm quite lucky & have 2 stomachs - one for food & another for desserts.  In fact I think my dessert tummy is bigger!
One is supposed to eat sparingly of all courses and sip daintily of all wines - hence no problem.
