Secret to lovely scones?

Does anyone know any tips etc for the best scones? I go to several cafes for a scone, but they all seem so different, some are soft and moist but others can be quite crumbly.

If you use good quality ingredients and butter, it is difficult not to get good scones.
According to my dear wife cool hands are good and use a marble slab.
When I worked in a coffee shop and made fresh scones everyday which customers liked it was actually from packet scone mixture in big sacks, where is just added milk and maybe an egg this was years ago....then I just dolloped the light spoonable mixture (without rolling) in big piles and baked slowing till golden brown and still soft inside. I think the smaller the harder and drier they are and as soon and you touch them they go tough, maybe try to make a wetter mixture next time and dollop! I like rock cakes which are the same dollop style but with mixed spice and fruit...lovely
