Lamb liver / chicken liver

But can only get lambs liver - can I substitute this okay?

Sorry, but the photo looks like someone ... errm ... Anyhow, you can make lambs liver paté, so I suppose it'd be ok to substitute.
I would guess that it would be too strong.

That was my concern ummmmm -never made pate before

Suppose the best thing is to give it a go and see
can you not get chicken livers from the freezer section in your supermarkets? they do them quite cheaply,
I too think the lambs liver may be stronger in flavour & the texture will be different.

you'll find chicken livers frozen at the supermarket - never fresh
My Tesco's and Sainsbury's do them fresh.
I'd definitely stick with the chicken liver....I've certainly never seen lamb's liver pate.....;-0
my friends beg me to make chicken liver pate, and pay me for it. They all have it for their starter on christmas day.
I once substitiuted lambs liver - and it was a disaster!
It's always the milder livers that are used-like pork,chicken and duck.
i tried it because lamb is my favourite meat and thought it would just taste lamby.
It didn't!
I feel like making some pate now....lol

Well I made it with lambs liver, changed the pineau for Brandy and added fresh mint - can confirm that it was lovely - with two of the guests having seconds :)
