any idea what to do with the leaves other than to make stuffing?

dry them.... burn them they make the room smell nice.
use chopped into rice with chicken dishes....

Chop some and freeze in ice cube trays in water.then you can just add to soups and stews when you need.

sage is lovely with pork too.

I make a thick sage and onion gravy to have with sausages or liver.
