Glaze for roasted gammon

I was going to cook a gammon tomorrow (a la Gordon). Glaze needs demerara sugar, madeira, sherry vinegar and honey. I've got everything apart from sherry vinegar (haven't got any sherry either). What would be a good substitute?

wine vinegar? Balsamic?

I was thinking balsamic bednobs, but was wondering if it might be a bit strong. I suppose I could use red wine vinegar. Typical - I've got just every type of vinegar apart from that one.
what about mustard and sugar instead, best glaze out imo

I like mustard and sugar, but I always do that so I was going to do something different. Apart from anything else, if the step daughter sees me with mustard anywhere near it, she will refuse to eat it.
do nigella's one - treacle, mustard powder and demerera sugar
beer, as you've got enough sweet additives.
+1 for Balsamic.

Lots of good ideas there - thanks guys! I am liking the port idea - the port we've got tastes like bloody vinegar anyway (think it's been open a bit too long) so I could use that up which would justify opening the other bottle.

I shall just be pleased to have a non turkey meal. Just stripped the turkey carcass and even the cats are sick of it.
I would go for the Balsamic also-it is a bit sweeter than other vinegars-but has a nicer 'depth' to it. Just use a bit less. Port-as Naz said-would also be good. Not lemon juice though-a bit too acidic.
