smoked salmon parcels...

Loads and loads of recipes when you google.

I don't mind what they get filled with (not too much cream cheese as I find that sickening) but has anyone got a recipe??

chopped prawns mixed with a tiny bit of mayo and lemon juice?
dressed crab?
my fave kipper pate (from Saint Delia, this is the original recipe, not the newer healthier one)
1tin kipper fillets (sorry must be tinned as no bones)
juice of half a lemon
3 fl oz double cream
3 oz butter just melted
freshly ground black pepper
drain the fillets and scrape the skin off (you don't have to but it looks nicer) mash kipper flesh and GENTLY stir in the cream and butter then the lemon juice and pepper to taste. the consistency should be soft but moundable as it sets further when chilled. Check the seasoning and put into pots to set or dollop onto the smoked salmon.make up your parcel and chill.
horseradish sauce is very nice with fish. add a bit of cream to it and use that to bind the fish together.

Prawns and crab...now why didn't I think of that?

Salmon parcels on the menu today :-)
mmm sounds nice, i prefer the prawns rather than crab

I think I'll go for the prawns as well. We have loads of smoked salmon so I might do the crab tomorrow...
