Hello :-)

I'm thinking of baking some cheese scones, what type of cheese are best to use? i'm thinking of using up my grated red leicester, will that be ok?

Indeed. My late grandmother always used mature grated cheddar, and her cheese scones were delicious.

hmm i thought that, cos i googled the recipes and all suggested chedder, i wonder if anyone else uses a different type :)
I'm sure any similar cheese would be fine e.g. Red Leicester, but maybe not Cheshire, Caerphilly etc...
I guess you could use any as long as it is good and tasty, mild would be no good as you wouldn't taste it. I still prefer mature myself but then I am mature myself!

hehe, ok i will do a mix! gonna add cheddar cheese on to my shopping list.
Try using parmesan delicious...
Leicester will be too mild but will add lots of colour! Although if you would otherwise be throwing it out you may as well use it but I would add parmesan to it for taste.
I always get the mature cheddar as it has the most taste and therefore you need to use less of it for flavour, less fat/calories and tends to be about the same cost as a cheaper less tasty one that you have to use a lot of. Also, I hate dishes that are swimming in fat. Ugh!
try adding herbs with your cheese.
At the risk of advertising...if you are in the UK, Cathedral City is really good for cooking.
Gruyere would work well.
